Ingredients
  

1 tablespoon olive oil

1 pound Italian sausage (casings removed)

1 onion, chopped

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup ditalini pasta

Salt and pepper to taste

1/2 teaspoon dried thyme (optional)

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage and set aside.
  • In the same pot, add the chopped onion and cook for 3-4 minutes, until softened. Add the minced garlic and cook for another 1 minute until fragrant.
  • Add the chicken broth to the pot and bring to a simmer. Stir in the ditalini pasta and cook according to package instructions (about 8-10 minutes).
  • Once the pasta is cooked, lower the heat and stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes until the soup is creamy and the cheese is melted.
